- One Box of Cake Mix
- Eggs (per cake mix instructions)
- Oil for Cake
- 2.5 c. Prepared Frosting
- Prepared Meringue Drops (2 per mini cake)
- Edible Gold Leaf (optional)
- Baking Spray with Flour

Combine the cake mix, eggs, oil and water, then mix according to the package instructions. Preheat the oven and spray a sheet pan with a baking spray that includes flour. Pour the cake batter into the prepared pan and use a spoon to push the batter to the edges. Spread the batter as evenly as possible using the back of the spoon. Bake in a preheated oven for 15 to 20 minutes. The cake is done when a toothpick inserted into the center comes out clean.

When the cake is completely cool, use a biscuit cutter (ours was just under two inches wide) to cut the cake into small circles. Set them aside. There will be a good bit of cake left over in the pan. If you don't want the extra cake to go to waste, you can use it to make cake balls at a later time.

Fit a frosting decorating bag with a 2D tip and fill with frosting. Place a mini cake layer on a paper plate and pipe a swirl of frosting around the top.

Top with a second cake layer, making sure that it is centered on top of the bottom layer, then pipe another swirl of frosting around the top of that layer.

If you like the gold leaf look, this is where you can get creative! Add small smears of frosting to the meringues (this will serve as glue), then press gold leaf on top of the frosting. It's so easy! Next, simply place two meringues on the top of each cake and tuck in a few clippings of Frosted Greenery Stems. Check out my simple pineapple meringue recipe if you want to make your own.

Place each decorated mini naked cake inside a Cupcake Pedestal for serving. We spray painted these with a champagne pink shade ahead of time for added color and interest. Serve your mini naked cakes immediately.
