- 1 Box Red Velvet Cake Mix
- 1 Can Cherry Pie Filling
- 1 Container Chocolate Icing
- 1/3 c. Vegetable Oil
- 3 Eggs
- 1 c. Water
- 1 Container Red Sprinkles




Preheat the oven to 350 degrees. Prepare a boxed mix of red velvet cake mix according to the package instructions. Put the cake mix, 3 eggs, 1/3 cup of vegetable oil and 1 cup of water into a mixing bowl and mix on low for 30 seconds with a mixer until all ingredients are mixed and cake mix is moistened. Then continue to mix on medium for 2 more minutes. The batter will be a bright red.



Fill each cupcake tin 1/3 of the way full of batter then add one tablespoon of cherry pie filling to each.

Bake in oven for 20 minutes. When done, the tops of the cupcakes should spring back when you press gently down on the tops of them. Let fully cool.




Turn a plastic storage bag inside out and place the entire container of chocolate icing inside the bag. Turn the bag back to the right side and press all the icing down into one bottom corner of the bag. Snip the end of the corner and you now have a pastry bag to ice your cupcakes with.



Once the cupcakes are completely cool, place a swirl of chocolate icing on the tops of each. Sprinkle with red sprinkles (optional). They are now ready to eat! Look how the cherry filling oozes out of the cupcake when you open it!
