- 1 c. Shredded Coconut
- 20 oz. Jar of Pineapple Chunks (pureed)
- 2-4 Drops Coconut Flavoring
- Buttercream Frosting
- 1/3 c. Shredded Coconut
- 1 t. Coconut Oil

Combine the cake mix, pineapple puree, shredded coconut and coconut flavoring. Mix with an electric mixer for two minutes.

Fill colorful cupcake liners about 3/4 full. Bake at 350 degrees for 17 minutes.
For topping: add coconut oil and shredded coconut to small skillet on medium heat. Stir until browned.

Frost cupcakes with your favorite buttercream frosting and sprinkle coconut on top.
