- 1 Box of Chocolate Cake Mix
- 1 Bag of Mini Chocolate Chips
- 2 (3 oz.) Bars of Cream Cheese (softened)
- 1 Egg
- 1/3 c. of Sugar
- 1 Tub of Vanilla Frosting

Preheat oven to 350 degrees and line muffin tins with 24 cupcake liners.

Prepare cake batter according to directions on box. I used Betty Crocker’s™ Chocolate Fudge Cake Mix for this recipe, but any chocolate cake mix will work.

Prepare cream cheese filling by beating cream cheese, egg, and sugar together with an electric mixer on medium. Hazel’s favorite part is cracking the eggs. I typically like to have her crack each egg into a small bowl before adding it to the rest of the ingredients. It makes it a lot easier to fish out any shells! Also, always make sure to wash your child’s hands after touching raw eggs.

Stir in 1 c. of mini chocolate chips – another great step for young children to help with. Hazel always makes sure to save a handful of chocolate chips to snack on during the process!

Drop a spoonful of cream cheese filling in the center of each cupcake.

Bake the cupcakes for 22-25 minutes. Let the cupcakes cool in the muffin tin for 10 minutes before removing.
Once completely cool, ice the cupcakes with vanilla frosting and top with additional mini chocolate chips.
