- 2 c. Flour
- 1/2 t. Salt
- 2 t. baking powder
- 1 Stick Softened Salted Butter
- 1 c. Sugar
- 2 Eggs
- 1 c. Vanilla Flavored Coffee Creamer
- 1 t. Vanilla Extract
- 2 Cans Vanilla Icing
- 1 Tube Green Gel Good Coloring
- 1 Tube Purple Gel Food Coloring

Preheat the oven to 350 degrees and line a cupcake pan with Halloween cupcake liners.

In a large mixing bowl, whisk together all the dry ingredients (flour, salt, baking powder, sugar).

In a separate bowl, whisk together the eggs, creamer and vanilla extract.

Add the softened butter to the dry ingredients and using a fork, cream the butter into the flour mixture.

Put the flour mixture in a mixing bowl with the wet ingredients and mix on medium until smooth.

Fill each of the cupcake liners 3/4 of the way full with the batter. Bake for 23-25 minutes.

Remove from the oven and set them aside to cool.

Put each can of vanilla icing into two separate bowls. Add green food coloring to one bowl and purple food coloring to the second bowl and stir until fully combined. Add more food coloring as needed to get the specific color you want.

Put all the purple and green icing in two separate pastry bags. Secure the ends of each bag with a twist tie. Snip off the ends of the bag.

Snip the end of a large pastry bag or the corner of a one-gallon food storage bag and place a 1M icing tip snuggly into the corner. If you use a food storage bag, wrap the excess plastic bag around the tip and secure with tape. Place both the purple and the green icing bags inside the larger pastry bag. Be sure to put the ends of both icing bags into the icing tip. You're now ready to place icing on your cupcakes.

Get your cupcakes ready to be frosted. Place your fully cooled cupcakes on a black round plate.

Holding your pastry bag upright, squeeze out the frosting with even pressure the whole time. Start at the outside of the cupcake and continue around the edge, working inward. When you reach the middle, pull straight up. You will see a swirl pattern of both colors in your frosting.

Place your cupcakes in the fridge for ten minutes to allow the frosting to firm up a little bit. Remove from the fridge and place a frosted eyeball lollipop down into the center of each cupcake. You could also place an eyeball gumball on the top of each as well.
