- 1/2 c. Limoncello
- 1 Can Sweetened Condensed Milk
- 2 c. Fresh Squeezed Lemon Juice
- 1/2 c. Water
- 1/2 c. Raspberries
- 1 Bottle of Prosecco
- 1 Bundle Mint Leaves, for Garnish
 
                            Start by making your boozy popsicles. Add the limoncello to a large mix bowl.
 
                            Add the sweetened condensed milk to the limoncello.
 
                                 
                                 
                                Add the fresh squeezed lemon juice to the bowl. When we were in Italy we bought one of these crazy juicing contraptions after we were memorized by the vendor at the local market and all the juice he could get from one lemon. It was fun to use this little contraption because it reminded me of our trip, but you can use your favorite method to get your fresh squeezed lemon juice.
 
                            Add the remaining ingredients and whisk everything together until well blended.
 
                            If you want just lemon flavored poptails you can stop here. But, if you want to make these beauties extraordinary add 1/2 cup of finely chopped raspberries and mix everything together.
 
                            Pour the mixture into your popsicle mold. Freeze overnight or for 4-6 hours.
 
                            Once your poptails are frozen you can enjoy them on their own, or you can create the ultimate summer cocktail.
 
                            Fill a wine glass with chilled Prosecco. Add a few raspberries and then drop in your limoncello poptail.
 
                            Add a sprig of mint for garnish and a cute striped paper straw and you have the perfect summer cocktail. Easy, refreshing , you and your friends are going to love this cocktail!
