- 8 oz. Pkg. Cream Cheese
- 1 Box Raspberry Jello Mix
- Juice of 2 Limes
- 1 c. Water
- 1 c. Heavy Whipping Cream
- 15 oz. Can Sweetened Condensed Milk
- 6 Sliced Lime Circles

Bring 1 cup of water to a boil, and stir in the jello mix until dissolved. Set aside, adding 1/4 cup ice to cool.

In a large bowl, mix the cream cheese until smooth, then add in the sweetened condensed milk and mix until well combined and smooth.

Add the lime juice and continue mixing until combined.

Add the jello mixture to the bowl in small amounts so as not to splash, and mix well. The recipe will begin to take on a lovely peachy pink color. Mix until all the jello mixture is combined and the mousse has reached a uniform color. Be sure to scrape the sides of the bowl to mix the entire contents well. Add the heavy whipping cream in small amounts at a time, and blend well. The mixture will begin to thicken up as you blend.

Spoon the mixture into Miniature Square Appetizer Cups and place in the refrigerator for an hour, or overnight for best results. This will allow the mousse to set.

When ready to serve, garnish with a slice of lime and add a miniature tasting spoon.
