Place nuts in a single layer on a baking sheet lined with parchment paper. Roast in the oven at 350 F for about 15 minutes, flipping halfway through. Remove the nuts from the oven, place in a mixing bowl and set aside. Reduce the oven temp to 300 degrees.

Chop and dice the crystallized ginger into small pieces and set aside.

Add syrup, vanilla, and spices to a sauce pan. Stir and bring the mixture to a boil over medium high heat.

Pour warm mixture slowly over the roasted nuts and stir. Avoid over-coating.

Once coated, spread nuts evenly in a single layer onto the parchment lined baking sheet and place back in the oven for 20-25 minutes.

Allow nuts to cool completely, then scrape them into a bowl.

Stir in each of the mix ins until they are evenly distributed. Serve and enjoy!
