- 2 1/2 c. Butter
- 2 c. Sugar
- 2 Large Eggs
- 1 t. Vanilla Extract
- 2 t. Almond Extract
- 5 c. Flour
- 1 t. Baking Powder
- 1 t. Salt

Cream butter and sugar together in your electric mixer bowl using a paddle attachment on medium speed. Just mix until incorporated. Don’t over mix the butter. Make sure to scrape down the sides of the bowl and remix.

Slowly add eggs and continue to mix on medium speed. Scrape down the bowl again and continue mixing.

Add vanilla and almond extract and mix until incorporated. This should just take a few seconds.

In a separate bowl, whisk together the flour, baking powder, and salt.

Slowly add the flour mixture. Mix on low speed until incorporated. I had to add the flour in 3 separate times until I finally got it all into the mixing bowl. Mix the dough until it starts to clump and form a ball. Don’t over mix.

Place the dough onto a sheet of parchment paper. Place a second sheet of parchment paper over the top of the dough and roll the dough to desired thickness.

Put dough on cookie sheet and place in refrigerator for about an hour or until firm. If you are impatient like me, you can put it in the freezer for about 10 minutes or so. Keep an eye on it because you don’t want it to freeze.

Remove the dough from the refrigerator or freezer and use a cookie cutter to cut out your sugar cookies.

Preheat oven to 350 degrees. While the oven is heating up, place the cookies on a sheet of parchment paper on a pan and put the pan in the freezer for 3 minutes before baking. Putting them in the freezer will allow the cookies to hold their shape. Bake cookies for 8-10 minutes.

Once cookies have cooled you can frost them with your favorite frosting. This cookie recipe is jam packed with butter, so I thought it was only appropriate to add butter cream frosting! You can add homemade or store bought frosting, both will be delicious.
