- 4 Plums
- 4 Thyme Sprigs
- 1/2 C Sugar
- 1/2 C Water
- Prosecco
- Thyme and Plum Slices for Garnish
- 1 C Ice

Let's begin with the Thyme infused simple syrup. Heat 1/2 cup sugar, 1/2 cup water and 2 sprigs of Thyme over medium heat and bring to a boil. Once the sugar has completely dissolved, remove the syrup from the heat and allow to cool.

Place a small strainer over a Quart Ball Mason Jar and strain the simple syrup. Add the simple syrup, 2 sprigs of Thyme and 6 to 8 slices of plum into a drink shaker. Muddle the ingredients until thoroughly mixed. Add the ice to the shaker and shake for about a minute.

Pour evenly into 4 Clear Stemless Wine Glasses and then top with your choice of Prosecco or Champagne. Add a few plum slices and fresh Thyme for garnishing and serve!
