- 3 Tbsp unsalted butter
- 2 oz. white chocolate, grated
- 2 1/4 c. flour
- 1 Tbsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 c. sugar
- 1 egg
- 1/2 Tbsp vanilla
- 1/2 c. buttermilk
- Pink gel food coloring
- Optional: Milk, to thin the batter if it becomes too thick
- 1/2 c. champagne add more if glaze is too thick
- 1/4 c. water
Melt 2 Tbsp butter and chocolate in microwave safe bowl, stirring to blend, set aside
In a medium bowl whisk the flour, baking powder, baking soda and salt. Then set aside.
In large bowl mix sugar and egg until combined.
Add the butter and chocolate mixture, and blend well.
Add the vanilla, buttermilk and pink coloring to achieve your shade preference, and mix until well incorporated.
Gradually add in the dry ingredients until just combined. The mixture will be thick.
Spray a griddle or fry pan with baking spray and drop approximately 1/4 cup of the batter onto the hot surface, flipping to cook thoroughly on both sides.
Remove from heat and plate the pancakes. Top with glaze, and sprinkles.
For the glaze, melt 1 Tbsp butter over medium heat in a saucepan.
Stir in 1/4 c. water and sugar, bringing the mixture to a boil. Cook for 5 minutes, stirring constantly.
Remove from heat, and stir in the champagne. Continue stirring until smooth.
Drizzle the glaze over pancakes or cake. Finish with a dusting of powdered sugar if you like, and add gold star sprinkles and Champagne Kisses Sprinkle Mix from Baker's Party Shop.
