- Brownie Bites
- 6 c. Powdered Sugar
- 2 Sticks Unsalted Butter, Softened
- 2 Pkg. 8 oz. Cream Cheese
- 1 1/2 t. Coconut Extract
- 1 t. Rum Extract
- Royal Icing Flowers
Start by make the piña colada icing. Add the butter to the mixing bowl and beat until smooth. Add the cream cheese that has been cut into small to medium size pieces. Beat with the butter until well blended and smooth. Add the rum and coconut extracts. Slowly add in the powdered sugar, beating until smooth. Put the icing in a piping bag and set aside.
Use a small scoop and hollow out a depression in the middle of the brownie. You can use store-bought brownie bites or make your own using a favorite brownie recipe.
Use an icing bag to pipe the piña colada frosting into the hollowed out center of the brownie.
Place a cocktail parasol in the brownie bite.
Cut a small piece off of the colored paper straws and then put it in the brownie. Add mini royal icing flowers to complete your luau inspired piña colada brownie bites.
