- 6 Large Eggs
- 1 c. Half & Half
- 1 c. Mozzarella Grated Cheese
- ½ c. Parmesan Cheese
- 1 c. Fresh Spinach, chopped
- 1 c. Baby Bella Mushrooms, chopped
- Salt and Pepper (to taste)
- Pinch of Cayenne (optional)
- 2 Tbsp. Olive Oil

Begin by preheating your oven to 375 degrees and then coarsely chop one cup of fresh spinach.

Next chop one cup of baby bella mushrooms.

Add 2 Tbsp. olive oil to a skillet and saute the mushrooms and spinach together over medium low heat.

Beat the eggs in a large bowl. One that is pourable is helpful.

Whisk the eggs, half and half, cheese and spinach and mushroom mixture together until light and fluffy. Add salt and pepper to taste and a pinch of Cayenne if desired.

Pour the mixture into a lightly greased mini muffin tin and bake for 15-25 minutes until the egg mixture is set. Remove from the oven and let cool for 5 - 10 minutes.
