- 1 c. Rolled Oats
- 1/2 c. Packed Light Brown Sugar
- 6 Tbsp. All-Purpose Flour
- 8 Tbsp. Unsalted Butter, Cut into Pieces
- 1 - 21 oz. Can Cherry Pie Filling
- 9 in. Rolled Refrigerated Pie Crust Dough
- 1/2 t. Cinnamon

In a mixing bowl, place the brown sugar, flour, oats, cinnamon and butter together.

Blend the butter into the dry ingredients using your fingers until the mixture resembles coarse crumbs. Set this mixture aside for a few minutes.

Roll out the pie crust and use your mini pie tins as a cookie cutter. I was able to cut out 8 pies from a 9" piece of dough.

After you have cut out the dough, place the dough pieces inside of the mini pie tins.

Fill each pie tin with about 1 1/2 Tbsp. of cherry filling.

Sprinkle the crumble mixture over the top of the cherry pies.

If you have a few scraps of dough left, you can make mini lattice pies just to mix it up a little. Place the pies on a cookie sheet lined with parchment paper and bake at 400 degrees for 30 minutes or until the crusts are golden brown.

After the pies have cooled, place them on and around a white ceramic cake stand with gingham napkins for the guests to help themselves. Topping the pies with vanilla bean ice cream is always a good idea!

Place the pies inside red cupcake boxes, tie with a blue and white striped ribbon and tuck in a blue fork to send home with your guests.
