- 3 Eggs
- 2/3 c. Sugar
- 1 c. Flour
- 1/2 tsp. Baking Soda
- 1/2 c. Butter; melted and cooled
- 1 1/4 tsp. Vanilla Extract
- 1/2 Tbsp. Lemon Zest
- Non-Stick Cooking Spray

Begin by preheating your oven to 350 degrees then spray your madeleine cookie pan with non-stick spray.

Melt the butter in a microwave-safe dish then set aside and allow to cool to room temperature.

In a medium mixing bowl, combine sugar and eggs. Mix until slightly foamy then add in the flour and baking soda. Mix at medium speed until ingredients are thoroughly combined.

Add in the butter, vanilla and lemon zest.

Scoop 1 to 1 1/2 Tbsp. of batter into each madeleine mold. Bake for 10 minutes or until the edges are golden brown.

Allow the cookies to cool in the pan for an additional 5-7 minutes then remove the cookies and place them on a wire rack to cook completely. Serve on gorgeous party porcelain plates at your Spring in Paris Bridal Shower and enjoy!
