- 2 Sticks Softened Butter
- 2 c. Sugar
- 3 c. Self Rising Flour
- 5 Eggs
- 1/2 t. Baking Soda
- 1/2 t. Salt
- 8 oz. Sour Cream
- 1/3 c. Fresh Lemon Juice (About 2 Large Lemons)
- Lemon Zest of 2 Lemons
- 2 t. Dried Lavender Flowers
- Lavender Stems
- To Make Glaze:
- Juice from 1 Lemon
- 2 Tbsp. Hot Water
- 1 c. Powdered Sugar

Heat oven to 325 degrees. Squeeze lemons to get 1/3 cup lemon juice and set aside.

Grate zest from two lemons and set aside.

Add 2 cups sugar to 2 sticks softened butter and mix until well incorporated. Add eggs one at a time and mix well.

Add flour, one cup at a time, and mix. Add baking soda and salt and mix.

Add sour cream and mix.

Add lemon juice and mix.

Add dried lavender and lemon zest and fold into batter.

Coat your baking pan with cooking spray (I used my mini loaf pan, which I love) and spoon in batter filling each cavity about 2/3 full.

Bake for 30 minutes if using mini loaf pan. If using bread pan, bake at 45 minutes, or until a toothpick inserted into the center comes out clean. Allow cakes to cool and remove from pan.

Prepare your glaze by juicing one lemon and heating lemon juice in the microwave for 30 seconds.



Add powdered sugar and mix well. Add hot water and continue to mix, adding more powdered sugar if needed until desired consistency is achieved. Drizzle cakes with lemon glaze sauce and garnish with fresh lavender.
