- 1 1/2 c. Flour
- 1/2 c. Granulated Sugar
- 2 t. Baking Powder
- 1/2 t. Baking Soda
- 1/2 t. Salt
- 3/4 c. Milk
- 1/3 c. Vegetable Oil
- 2 Large Eggs
- 2-3 Tbsp. Fresh Lemon Juice
- 2 t. Vanilla Extract
- 1 pkg Instant Lemon Pudding
- 8 oz. Cream Cheese
- 1/4 c. Granulated Sugar
- 1 T. Fresh Lemon Juice
- 1 t. Vanilla
- 1 Stick Butter (melted)
- 1/2 c. Granulated Sugar
- 1/2 t. Salt
- 1 c. Flour

Make the Lemon Instant Pudding according to the directions on the box. Juice one lemon in a small bowl and set aside.

Mix together the dry cake ingredients in a large bowl. (flour, baking powder, baking soda, sugar and salt). Set aside.

Mix together the wet cake ingredients in a medium bowl. (eggs, oil, lemon juice, vanilla, and milk) Beat for one minute.

Mix the dry and wet ingredients together well.

Pour the cake mix into a greased 13 x 9 in. pan. Bake for 5-10 minutes at 350 degrees.

While the cake is baking mix together 1 1/2 c. of the lemon pudding, 8 oz. cream cheese, 1/4 c. sugar, lemon juice and 1 tsp. vanilla.

Mix together the strussel topping in a small bowl. (melted butter, sugar, flour, and salt)

Pull the cake from the oven, add on the cream cheese layer, avoiding the edges. Sprinkle on the streusel mix. Add to the oven and bake for another 20-30 minutes at 350 degrees.

Chill and serve in square bars.
