Lemon lovers will enjoy every last bite of this dreamy crumb cake recipe. This Lemon Cream Cheese Crumb Cake is one of my favorite desserts to make in the springtime or summer. I love the mix of the sweet cake and tart lemon, there are three layers of goodness in this cake; a sweet lemon cake bottom, a lemon cream cheese middle and topped off with a streusel crumb topping. The streusel crumb topping in my favorite part. Serve on fancy paper products at a fun luncheon or get together, this dessert is great to serve at a bridal shower or baby shower.

Ingredients
  • 1 1/2 c. Flour
  • 1/2 c. Granulated Sugar
  • 2 t. Baking Powder
  • 1/2 t. Baking Soda
  • 1/2 t. Salt
  • 3/4 c. Milk
  • 1/3 c. Vegetable Oil
  • 2 Large Eggs
  • 2-3 Tbsp. Fresh Lemon Juice
  • 2 t. Vanilla Extract
  • 1 pkg Instant Lemon Pudding
  • 8 oz. Cream Cheese
  • 1/4 c. Granulated Sugar
  • 1 T. Fresh Lemon Juice
  • 1 t. Vanilla
  • 1 Stick Butter (melted)
  • 1/2 c. Granulated Sugar
  • 1/2 t. Salt
  • 1 c. Flour
