- 16 oz. Cream Cheese, Softened
- 1/2 c. Granulated Sugar
- 1 c. Heavy Whipping Cream
- 1/4 c. Confectioner's Sugar
- 1 t. Vanilla Extract
- 1 Package Instant Lemon Pudding Mix
- 1 Large (16 oz) Container Whipped Topping
- 2 c. Fresh Blueberries
- 1 c. Graham Cracker Crumbs
- 2 Tbsp. Melted Butter

Beat cream cheese and granulated sugar in a large bowl until light and fluffy – set aside.

Add the pudding mix, and slowly begin to add the whipping cream and vanilla while the mixer is on low. Continue to mix at a medium speed until filling mixture is smooth.

Carefully fold the whipped cream into the lemon cream cheese mixture until thoroughly combined.

In a separate bowl add the melted butter to the graham cracker crumbs and mix to combine.

Add a large spoonful of the graham cracker crumbs to the bottom of the mini square appetizer bowls.

Use a pastry bag to pipe the lemon cheesecake filling on top of the graham cracker crumbs.

Next, add blueberries on top of the lemon cheesecake filling.

Use a pastry bag filled with whipped cream and add a layer on top of the blueberries.

Continue layering the fillings until the container is full. Garnish with a dollop of whipped cream, blueberries and mint.
