- Ingredients:
- 1 c. Gluten Free Oats
- ½ c. Organic Puffed Rice Cereal
- ½ c. Almond Butter
- ¼ c. Honey
- ½ c. Shredded Coconut or Ground Flax Seed
- ¼ t. Vanilla
- Fruit and Nuts:
- 1 Bag Dried Mango, Chopped Up in Small Pieces
- 1 Bag Chocolate Covered Coconut Pieces, Chopped
- 1 Bag Raw Cashews, Chopped
- 1 Bag Dried Cranberries
- 1 Bag Chocolate Chips

Mix almond butter, honey and vanilla in a small bowl. In larger mixing bowl, mix oats, rice cereal, shredded coconut or flax seed.
Pour almond butter mixture over dry mixture and combine with rubber spatula. Put this mixture in fridge 20 minutes. During this time, set up your zone with little bowls of fruit, nuts and chocolate.

Take mixture out of fridge and divide into bowls for your kids. Show your kids how to take 1-2 Tablespoons of mixture in their hands, add some fruit and nuts of their choice and shape into 1 inch ball with hands.

Place on cookie sheet or plate and chill in fridge for 30 minutes, then enjoy!

We like to keep cellophane bags on hand for treat bags and tie them together with baker’s twine, or fill up a mason jar with the energy bites for a little gift. We like to keep ours in the fridge in the easy to use glass jars too.
