- 16 oz. Heavy Whipping Cream
- 2 Tbsp. Sugar
- 1 c. Lemon Curd
- Lemon Zest (from one lemon)
- Lemon Juice (from one lemon)
- Dried Sweetened Lemon Slices

Place metal mixing bowl and whisk or beaters in the refrigerator for about 15 minutes to get cold. After 15 minutes, pour the heavy whipping cream into the cold bowl. Add 2 Tbsp. sugar, then mix until stiff peaks form. I like to use my stand mixer because it does all the work for me!

While the heavy cream is mixing, scrape the outside of a washed and dried lemon onto a grater. Set the lemon zest aside. Squeeze the juice from both sides of the lemon.
Combine the lemon zest and juice with one cup of lemon curd and set aside.

Stop the mixer once stiff peaks have formed in the whipping cream. Gently fold in the lemon curd mixture until it is thoroughly combined.
Spoon the cold lemon mousse into mini pedestal cups and add a mini clear spoon. Garnish each cup with a candied lemon slice (I got mine from Trader Joe's), then refrigerate until ready to serve. Finally, these look beautiful displayed on a cake stand on a dessert table. These taste best when made shortly before serving, but can be kept in the fridge for a few hours before they are ready to be eaten.
