- For the Donuts:
- 1 3/4 c. All-Purpose Flour
- 2 t. Baking Powder
- 1/2 t. Salt
- 1/2 t. Cinnamon
- 1/2 t. Nutmeg
- 1/2 t. Allspice
- 1/8 t. Ground Cloves
- 1/3 c. Canola Oil (or olive oil)
- 1/2 c. Light Brown Sugar
- 1 Egg
- 1 t. Vanilla Extract
- 3/4 c. Canned Pumpkin
- 1/2 c. Milk
- For The Coating:
- 4 Tbsp. Unsalted Butter
- 2/3 c. Granulated Sugar
- 2 Tbsp. Cinnamon

Preheat your oven to 350 degrees. Spray your muffin tin with non-stick baking spray. In a medium bowl mix together the first seven ingredients - flour, baking powder, salt, cinnamon, nutmeg, allspice, and cloves.

In a second bowl mix together the wet ingredients, oil, brown sugar, egg, vanilla extract, canned pumpkin, and milk. Mix just until smooth. Add dry ingredients to wet and mix just until combined.

Using a spoon divide batter evenly among muffin cups. Bake 10-15 minutes or until a toothpick comes out clean.

While the donuts bake mix your cinnamon sugar coating. Melt butter in one bowl and combine sugar and cinnamon in another.

Remove donuts from the oven and let sit until completely cool. Once the muffins have cooled dip each in melted butter and then roll in cinnamon sugar mixture.

To serve pour your favorite hot chocolate into a frosty white coffee cup. Skewer one donut with a striped paper straw and place inside your drink as a stir stick. Dunk your cinnamon sugar pumpkin donuts into your hot chocolate to enjoy!
