- 1 Box Dark Chocolate Cake Mix
- 2 Eggs
- 1/2 c. Vegetable Oil
- 1 c. Sour Cream
- 1 t. Vanilla
- 1 Bag Mini Chocolate Chips

Mix all ingredients together, minus the chocolate chips. When all is well mixed, stir in chocolate chips until evenly spread throughout. Pour into mini cupcake paper liners, in a mini-muffin pan. A little tip: pour your batter into a large plastic baggie and cut the tip off of one corner to make for easy squeezing into each liner.

Bake at 350 degrees for about 10 minutes, or until a toothpick comes out clean. Remove from oven and cool completely. I baked them about an hour before the party. Each little ballerina got two cupcakes to decorate. I handed out pink paper plates to try to contain the sprinkles as much as I could (though I had a lot to clean up off my floor too!). Once they were done decorating, I gave each child one of these adorable nutcracker takeout boxes to carry them home in.

Cleanup was made a lot easier because of the pink tablecloth. Once we were finished with activities, I scooped up all the trash in the tablecloth and tossed it in the trash.
