- 1 c. Butter
- 3/4 c. Sugar
- 1 Egg
- 1 c. Carrots, cooked and mashed
- 2 c. Flour
- 1/4 t. Salt
- 2 t. Baking Powder
- 1 t. Vanilla
- For the Icing:
- 1/4 c. Butter, or Margarine
- 2 c. Powdered Sugar
- 3 Tbsp. Orange Juice
- 1 Tbsp. Orange Rind

Cream butter and sugar.

Add egg and carrots.

Sift flour, salt, baking powder together and add butter mixture.

Add dry mixture to wet mixture and blend together.

Add vanilla and mix in.

Using a cookie scoop, drop onto cooking sheet and bake at 350 degrees for about 12 minutes, or until done.

While my carrot cookies are baking, I start to make the Orange Icing.

Cream butter and sugar together.



Add orange juice and rind.




Spread over slightly cooled cookies. Now you’re ready to enjoy. I have a hard time waiting once I see that icing melting over the tops of those cookies.

I thought these Carrot Cookies with Orange Icing looked so pretty on the Garden Party Dessert Plates. I plan on taking these to a family party and thought this is the perfect way to display them. I hope you enjoy these cookies as much as we do.
