- 1 Box of Yellow Cake Mix
- 1 Container of Vanilla Icing
- 2 c. of Banana Milk
- 3 Eggs
- 2/3 c. Softened Butter
- 1 Packet Instant Banana Pudding
- Handful of Chopped Pecans
- 2 c. Cold Milk
- Yellow Food Coloring

In a mixing bowl, combine the cake mix, banana milk, butter and three eggs. Mix on medium-high until well combined.

Fill the cupcake tin with cupcake liners and fill each about 3/4 of the way full of cake batter. Bake on 350 degrees for 20 min.

While the cupcakes are baking, let's make the banana pudding. Add the pudding mix and 2 cups of milk to a mixing bowl and beat for 2 minutes. The pudding will be soft-set in about 5 minutes. Sit the pudding aside to firm up.

Remove the cupcakes from the oven and let fully cool then place the cupcakes into cupcake wrappers.

Scoop some of the pudding into an icing bag with a filling tip secured in one end. Place the filling tip down into the center of each cupcake and squeeze the pudding into the middle of each cupcake while pulling the tip out.

Place all the icing into a mixing bowl. Stir in drops of yellow food coloring and mix until fully combined and the desired yellow color is achieved. Set aside.

Snip the end of an icing bag and place an icing tip down inside the bag until the tip is secure in the tip of the icing bag. Add the yellow icing to the icing bag and squeeze it down into the tip of the bag.

Now it's time to frost the cupcakes! Using the icing bag, squeeze the icing around the entire top of each cupcake.

Finish them with a sprinkle of chopped pecans.
