
Start creating this rainbow inspired unicorn dessert by baking the confetti cake mix per the directions in the box.

Once your cake is fully baked and cooled, use an empty mason jar to cut out perfectly sized miniature cake circles. Cut enough so that there are 3 cake circles per mini mason jar.

Start layering your mini cakes! Start by placing one mini cake in the bottom of each mason jar. Then, using a piping bag (you can substitute a ziplock bag with the corner trimmed off in a pinch!) add a dollop of strawberry icing. Lastly, add a pinch of rainbow confetti sprinkles. Repeat this pattern until there are 3 layers of cake, icing and confetti sprinkles.

Create your unicorn horn! Roll out your fondant (we found ours in our local supermarket baking aisle). Form 2 long rolls of fondant and twist them together, forming a unicorn horn. Repeat this step for the necessary amount of horns.

Attach the fondant unicorn horn to a trimmed piece of paper straw. This will ensure that your horn doesnt tip over or sink into the icing at all. Place the unicorn horn on the top of each mini cake at a slight angle.

Using the unicorn craft punch, punch our gold unicorns and adhere them to the front of each jar.

A gorgeous confetti unicorn cake needs a special spoon for an extra colorful detail! Using your Washi tape, create a rainbow diagonal stripe pattern.
