
Prepare your cake batter (I used this recipe) and pour it into a large rectangular pan. Leave a bit of batter out and put it into a smaller rectangular pan to use later for the circle toppers.
Prepare your icing. I first tried to use icing out of a can because the colors were so vibrant. However, that kind of icing is so thick and sticky that it was really difficult to spread evenly on the cake. I would definitely recommend using homemade butter cream icing (I used this recipe).

Bake your cake and let it cool for about 30 minutes. Remove the cake from the pan, and using a large serrated knife, horizontally slice a small layer off the top of the cake so it becomes flat.

Cut the ends off of the rectangle so the edges are even.

Use a ruler to measure the exact center of the cake length wise. Set the ruler on top of your cake and use it as a guide while you cut the cake in half.

Place one of the rectangles on your cake platter. Use an ice cream scoop to put a few big scoops of white butter cream frosting on top of the cake and use a spatula or flat knife to smooth it out evenly over the top of the cake.
Stack the second rectangle on top of the iced cake. Use your large knife to trim any edges where the cake is uneven. Add pieces of parchment paper around the bottom edges of the cake to keep icing from getting on your serving tray.



Use an ice cream scoop to place a few scoops of colorful icing on top of the cake. Then use your spatula or knife to spread a thin layer of icing all over the outside of the cake. Scoop more icing on top and evenly spread another thicker layer of icing all over the cake.

Use a circle cookie cutter to cut pieces of cake out of the second pan. Ice the sides of the circles while holding them in your hand and then place them on top of your iced cake.

Once the circles are all in place, frost the tops of them all at once.
